- 2 cloves garlic
- 1 onion
- 2 tsp lemon juice
- 2 Bay leaves
- 2 rosemary sprigs
- 150 ml red wine
- 150 ml olive oil
- 1 kg beef fillet (whole piece)
- Salt
- Pepper
- 6 tomatoes

Peel and finely chop the garlic and onion, mix with lemon juice, red wine, olive oil, salt, pepper, and herbs. Rinse the meat, pat dry, place it in a bowl with the marinade, cover and marinate overnight in the refrigerator.

Take out 2 hours before cooking, let drain well, strain the marinade through a sieve. Tie the meat with kitchen twine, put it in a grill pan, spread the collected onions and garlic over the meat, sear on a hot grill for 1 minute, move aside slightly and cover to roast for 15 minutes.

Let rest for 5 minutes. Wash the tomatoes, halve them, and char on the hot grill for 5 minutes. Slice the meat and serve with onion-garlic sauce.
