Ingredients
- 1 Aubergine
- 2 Zucchini
- 2 bell peppers (red and yellow)
- 1 onion
- 1 Garlic clove
- 4 tomatoes
- 3 tbsp olive oil
- Sea salt
- Pepper (freshly ground)
- 1 herb bundle (2 thyme sprigs, 1 rosemary sprig; 1 oregano stalk)
Instructions

Cut the washed and cleaned eggplant, zucchini, and peppers into cubes. Peel and finely dice the onion and garlic. Wash the tomatoes, cut off the stem ends, and chop them into pieces.

Sauté the onions and garlic briefly in hot oil. Add the eggplant and peppers and sauté for 1-2 minutes. Stir in the zucchini and tomatoes, season with salt and pepper. Place the herb bundle on top, cover, and simmer gently for 3-4 minutes, adding a little water if needed.

Finally remove the herb bundle again and taste to adjust seasoning.

Serve Grandma’s paprika vegetables with white bread as desired.
