Beef Fillet with Giant Portobello Mushrooms

Ingredients

  • 4 beef fillets (about 160 g each)
  • 4 large portobello mushrooms
  • 2 carrots
  • 2 black salsify roots
  • 2 onions
  • olive oil
  • Salt
  • ground pepper
  • 100 ml Vegetable broth
  • 4 Tbsp chives
  • 1 sprig tarragon
  • 1 tbsp butter

Instructions

    Wash the fillets, pat dry and tie with kitchen twine. Clean the mushrooms and remove stems. Peel carrots and black salsify, cut lengthwise in halves and then into diagonal pieces. Peel onions, halve them and slice into strips. Sauté vegetables in 2 Tbsp hot oil. Season with salt and pepper, deglaze with broth. Cover and steam gently for about 8 minutes.

    Brush the meat and mushrooms with oil and grill on a grill or in a grill pan. Grill mushrooms for 4–5 minutes and fillets 2–4 minutes per side. Season both sides with salt and pepper.

    Remove vegetables from the stock, arrange them with mushrooms and fillet. Stir chives and torn tarragon into butter over the vegetable stock, taste, and drizzle over the meat and vegetables.
