Fruitful Black Salsify Curry

Ingredients
- 800 g black salsify
- 2 tbsp lemon juice
- 1 onion
- 1 Garlic clove
- 4 Spring Onions
- 1 tsp mustard seeds
- 2 tbsp Vegetable oil
- 1 tsp curry powder
- 400 ml Vegetable broth
- salt to taste
- 2 tart apples
- 1 red chili pepper
- 0.5 cinnamon stick
- coriander leaves (for garnish)
Instructions

Peel the black salsify, cut diagonally into slices and place in cold water with lemon juice. Peel and finely dice the onion and garlic. Wash and trim the spring onions, cutting them into 1–2 cm pieces. Sauté the onion, garlic and mustard seeds in hot oil until translucent. Stir in the curry powder and deglaze with broth. Bring to a boil and add the drained black salsify. Season with salt and simmer gently for about 10 minutes.

Wash, peel, halve, core, and cut the apples into wedges. Add them with the spring onions, chili and cinnamon to the curry and cook everything together for another 10 minutes.

Taste at the end and serve garnished with coriander.
