Beef Fillet with Chocolate Sauce and Asparagus

Ingredients
- 500 g beef fillet (whole piece)
- 1 tbsp butter
- 1 tbsp Olive Oil
- 8 stalks green asparagus
- 40 g Butter
- black pepper, freshly ground
- 50 g dark chocolate (at least 80% cocoa content)
- 2 tbsp butter
- 4 tbsp balsamic cream

Sear the beef fillet in butter and oil all around for 2 minutes, wrap it in foil and let it rest at 80°C for about 20 minutes. Wash the asparagus, trim the woody ends and cook them in plenty of salted water until al dente (8-12 minutes). Remove from water, drain, melt butter in a pan and quickly toss the asparagus.

Finely chop the chocolate. Heat the butter with the balsamic cream and melt the chocolate into it. Take the fillet out of the oven, stir the resulting jus into the sauce. Slice the fillet into 8 pieces, arrange each on a preheated plate with two asparagus spears. Garnish with pepper and serve with sauce.
