Ingredients

  • 1 kg beef fillet
  • 1 kg fresh spinach leaves
  • Salt
  • Pepper
  • ground nutmeg
  • garlic salt
  • 200 g pork net
  • 300 g Mushrooms
  • 400 g beans
  • 1 onion
  • 200 g thin ribbon noodles

Instructions

    Trim the beef fillet.

    Clean the spinach and blanch briefly in salted water. Shock in cold water and drain.

    Rinse the pork net well, lay it on a work surface and pat dry with kitchen paper. Spread the spinach evenly over the pork net and season with salt, nutmeg, and a touch of garlic salt. Clean the mushrooms and dice them small. Quickly sauté in oil and distribute over the spinach. Then season the beef fillet with salt and pepper, sear it hot, and place it on top of the mushroom bed. Fold the net over the fillet and press the sides underneath. Preheat the oven to 120 °C (top and bottom heat) and roast the fillet for about 50‑60 minutes.

    Meanwhile dice the onion. Clean the beans and blanch in boiling salted water for about 5 minutes. Sauté the onion cubes in butter, add the beans, and season with salt and pepper.

    Cook the noodles in salted water until al dente.

    Let the beef fillet rest before serving, then slice it, taste the fond (reduce if desired), and plate with the beans and noodles on a dish.
