Beef Fillet for Christmas

Try the beef fillet for Christmas with pears from Spoonsparrow – a perfect combination of savory and sweet.

Ingredients

  • 4 slices beef fillet (about 160 g)
  • 2 tbsp oil
  • 1 Shallot
  • 125 ml grape juice
  • 125 ml water
  • 1 tbsp balsamic vinegar
  • 4 pears
  • 0.5 cinnamon stick
  • 1 Tbsp lingonberries (jar)
  • Salt
  • Pepper (freshly ground)
  • parsley (for garnish)

Instructions

    Preheat the oven to 100 °C (fan 80 °C; gas: level 1). Wash and pat dry the beef fillet, season with salt and pepper, then sear it in a hot pan with oil on both sides.

    Remove from the pan and bake for about 15 minutes until pink. Peel and finely dice the shallot, sauté it in the pan drippings. Deglaze with grape juice, water, and balsamic vinegar.

    Peel, halve, and core the pears; add them with the cinnamon stick to the grape juice mixture. Simmer gently for about 5 minutes so the pears absorb flavor but stay firm. Reduce the liquid by half, remove the cinnamon, stir in lingonberries, season with salt and pepper, then return the pears.

    Take the beef fillet from the oven, slice into thick strips, and arrange on plates with the pears and sauce. Garnish with parsley before serving.
