Ingredients
- 6 beetroot roots
- 2 carrots
- 2 onions
- 1 tbsp Rapeseed Oil
- 750 ml vegetable broth
- 6 tbsp lemon juice
- 1 tsp Honey
- Salt
- Pepper
- 2 sprigs parsley
- 20 g sour cream (2 tsp)
Instructions

Peel beetroot, carrots and onions. Roughly cube beetroot and carrots, finely chop onions.

Heat oil in a pot. Sauté vegetables over medium heat for 3 minutes. Add broth, lemon juice, honey, salt and pepper; simmer over medium heat for about 30 minutes. Then puree finely.
