Beef and Vegetable Stir-Fry with Noodles

Ingredients

  • 600 g beef fillet
  • 1 Garlic clove
  • 2 cm fresh ginger
  • 1 small red chili pepper
  • 1 Lime (juice)
  • 4 tbsp Teriyaki sauce
  • 150 g shiitake mushrooms
  • 1 red bell pepper
  • 3 spring onions
  • 250 g Soba noodles
  • 2 tbsp peanut oil
  • 1 tbsp honey
  • 2 tbsp sesame seeds
  • 1 tbsp soy sauce

Instructions

    Rinse the beef, pat dry, slice into thin strips and place in a bowl. Peel garlic and ginger; finely mince garlic and grate ginger. Slice chili into thin strips after removing seeds. Mix lime juice, garlic, ginger, chili, and teriyaki sauce with the beef. Cover and refrigerate for about 2 hours.

    Clean mushrooms. Wash bell pepper, halve it, remove seeds and membranes, then slice into thin strips. Trim spring onions and cut into ~2 cm pieces.

    Cook soba noodles according to package instructions.

    Heat peanut oil in a wok over medium-high heat; stir-fry mushrooms and bell pepper for about 2 minutes.

    Remove beef from the marinating liquid and let it drain. Push vegetables to the side of the wok (or remove briefly) and add beef. Stir-fry for about 2 minutes. Whisk honey and sesame seeds together, pour over the beef, mix, and let sit briefly. Season with soy sauce and pepper. Drain noodles, place on plates, top with the wok contents, and serve.
