Ingredients

  • 600 g lamb meat (fillet or loin)
  • 1 pineapple
  • 2 tbsp teriyaki sauce
  • 1 tbsp honey
  • 1 Lime (juice)
  • 200 g basmati rice
  • Salt
  • ground pepper

Instructions

    Rinse the meat, pat dry and cut into bite‑size cubes. Peel the pineapple with a sharp knife, quarter it, remove the core and slice the quarters into rounds. Alternate threading the meat and pineapple onto wooden skewers and place them side by side in a shallow dish.

    Whisk together the teriyaki sauce, honey and lime juice and drizzle over the skewers. Cover and marinate for about 2 hours.

    Steam the rice according to package instructions.

    Remove the skewers from the marinade, drain and grill each side for 3‑4 minutes. Finish with a pinch of salt and pepper and serve on top of the rice.
