Beef and Broccoli Stir-Fry

Ingredients
- 4 tbsp hoisin sauce
- 2 tbsp Soy sauce
- 2 tbsp sesame oil
- 5 spring onions
- 3 cloves garlic
- 1 piece fresh ginger (about 4 cm)
- 500 g broccoli
- 2 ribeye steaks (each about 800 g)
- 2 tbsp soybean oil
- 1 Lime (juice)
- 2 tbsp sesame seeds

Whisk the hoisin sauce with soy sauce and sesame oil. Wash, trim, and slice the spring onions into rings. Peel and slice the garlic cloves. Peel and finely chop the ginger.

Wash the broccoli and cut into florets. Cut longer stems lengthwise in half. Rinse the steaks, pat dry, remove any thick fat layers if desired, and slice thinly.

Heat soybean oil in a wok and quickly sear the beef slices two or three times until browned. Remove and set aside. Sauté the garlic and ginger in the wok. Add the spring onions and broccoli, stir-frying for about 2 minutes. Add lime juice plus 4-5 tbsp water and cook for another ~4 minutes. Return the beef, add the sauce mixture, and warm everything together briefly. Season with additional soy sauce and lime juice to taste. Divide into bowls and sprinkle with sesame seeds before serving.
