Bean vegetable with squid from Spoonsparrow is a delicious hearty dish of a special kind.

Ingredients

  • 300 g white beans (dried)
  • 1 onion
  • 1 Garlic clove
  • 500 g cherry tomatoes (red and yellow)
  • 250 g mini squid
  • 2 sprigs Basil
  • 2 tbsp olive oil
  • 4 tbsp Lemon juice
  • Salt
  • Pepper

Instructions

    Soak beans overnight in plenty of water. The next day cook beans in fresh water for about 45 minutes until al dente, then drain and let steam.

    Meanwhile peel onion and garlic. Quarter the onion and slice into thin strips. Finely chop the garlic. Wash tomatoes and halve them. Rinse squid and pat dry. Wash basil, shake off excess water, pluck leaves and roughly chop.

    Heat oil in a large pan, add onion and garlic and sauté for 2–3 minutes until translucent. Add squid and cook briefly. Drizzle with lemon juice, add tomatoes and simmer for 3–4 minutes. Finally stir in beans and basil, season with salt and pepper.
