Bean-Tomato Soup with Vegetables

- 300 g white beans (dried)
- 1 onion (large)
- 4 tomatoes (ripe)
- 2 carrots
- 3 celery stalks
- 3 tbsp olive oil
- 1 l water
- Salt
- Pepper (freshly ground)
- 2 tsp coriander seeds (crushed in a mortar)

Soak the beans overnight in cold water. Peel and finely chop the onion. Blanch the tomatoes, cool them, peel, quarter, and cut into pieces. Peel the carrots and slice thinly. Wash the celery stalks and cut into thick slices.

Heat oil in a large pot, sauté onion cubes until translucent, then add drained beans and pour in water. Season with salt and pepper, simmer over medium heat for 1 hour, adding more water if needed.

After 30 minutes, add carrots, celery, and tomatoes; season with salt, pepper, and coriander, and continue to simmer. Ladle the finished soup into bowls and serve garnished with fresh herbs.
