Beef Noodle Soup

Ingredients
- 500 g beef (e.g., brisket)
- 1 star anise
- 1 tsp Sichuan peppercorns
- 0.5 cinnamon stick
- 1 tsp fennel seeds
- 350 g Chinese noodles
- 1 Red Onion
- 1 red chili pepper
- 1 Garlic clove
- 1 tsp freshly grated ginger
- 2 tbsp Soy sauce
- lime juice
- Salt
- fresh herbs for garnish (Thai basil and coriander leaves)
Instructions

Wash and pat the beef dry. In a pot, bring about 2 l of water to a boil. Add the star anise, Sichuan peppercorns, cinnamon, fennel, and the beef. The meat should be covered by water and then simmer gently for about 2 hours. Remove the cooked beef from the broth, let it cool, then slice into thin strips. Strain the soup through a sieve.

Cook the noodles according to package instructions, rinse with cold water, and drain.

Peel the onion, halve it, and cut into fine strips. Wash, trim, and slice the chili pepper into rings. Peel and finely chop the garlic.

Bring about 1 l of the broth to a boil, add the garlic, ginger, chili, and onion. Season with soy sauce, lime juice, and salt. Briefly heat the beef and noodles in the soup, then serve in bowls garnished with fresh herbs.
