Bean Stew with Bacon and Pear

Ingredients
- 250 g white beans
- 600 g thick-cut bacon
- 2 l water
- 200 g Green beans
- 3 Carrots
- 4 potatoes (starchy)
- 1 tart apple
- 1 pear
- 2 tbsp lemon juice
- Salt
- ground pepper
- 2 tbsp chopped parsley
Instructions

Soak the white beans overnight.

Add the beans and bacon to the water, cover, and simmer for about 30 minutes.

Trim, wash, cut ends off, and chop the green beans into small pieces.

Peel, wash, and dice the potatoes and carrots.

Add the vegetables and cook for another 30 minutes.

Peel, quarter, core, slice the pear and apple, drizzle with lemon juice, and add to the stew 10 minutes before the end of cooking.

Slice the bacon and serve sprinkled with parsley.
