Ingredients

  • 250 g cooked mixed beans
  • 3 eggs
  • 2 slices of toast bread
  • 2 tbsp milk
  • breadcrumbs
  • Salt
  • Pepper
  • Cayenne pepper
  • 1 onion
  • 1 tsp butter
  • oil (for frying)
  • 1 tomato
  • 4 large lettuce leaves
  • 2 tsp herb butter
  • 4 pieces thin rectangular flatbread
  • 4 tsp crème fraîche
  • 2 tsp grated cheddar

Instructions

    Drain the beans. Cut the toast bread into cubes, drizzle with lukewarm milk, and let sit for 10 minutes. Peel and finely dice the onion; sauté in butter until translucent. Let cool.

    Mix the toasted bread cubes with onions and beans. Add 2 tbsp breadcrumbs and the eggs, season with salt, pepper, and cayenne pepper, then knead into a pliable dough, adding more breadcrumbs if needed.

    Shape the dough into eight patties (about 6–7 cm in diameter) and fry them in hot oil on both sides over medium heat until crisp brown. Lightly toast the flatbread as desired and spread with herb butter.

    Top each patty with a lettuce leaf and two tomato slices, place two bean patties on top, and garnish with a dollop of crème fraîche and a sprinkle of cheese.
