Grilled Lentil Patties

Ingredients

  • 200 g brown lentils
  • 1 sprig thyme
  • 1 bay leaf
  • 1 stale roll
  • 1 onion
  • 1 Garlic clove
  • 3 tbsp sunflower oil
  • 1 bunch parsley
  • 1 chili pepper
  • 0.5 tsp cumin
  • 0.5 tsp coriander
  • nutmeg
  • Cayenne pepper
  • 1 egg
  • 2 tbsp breadcrumbs

Instructions

    Rinse the lentils under running water, then simmer with 500 ml water, thyme sprig and bay leaf covered for about 30 minutes.

    Preheat the oven to grill mode.

    In the last 5 minutes remove the lid from the lentils, stir vigorously and cook until the liquid has evaporated and the lentils begin to break apart. Remove thyme and bay leaf. Soak the roll in warm water. Peel onion and garlic and finely dice. Sauté in 1 tbsp oil until translucent. Wash parsley, dry shake, pull leaves off stems and finely chop, leaving a few for garnish. Add to onions and remove from heat. Halve chili pepper, remove white seeds and finely chop. Drain the roll well. Mix lentils with chili, salt, onion mixture, roll and spices, knead and season richly. Fold in egg and breadcrumbs, form 8 patties. Brush remaining oil over patties and grill on a rack in the oven for about 5 minutes per side.
