Bean Chutney

Ingredients

  • 1.2 kg fresh green beans
  • 2 onions
  • 3 Garlic cloves
  • 2 tbsp plant oil
  • 70 g sugar
  • 1 tbsp chopped bean herb
  • 100 ml white wine vinegar
  • 400 ml Vegetable broth

Instructions

    Wash, trim and cut the beans into 2 cm pieces. Peel and finely dice the onions and garlic. Heat the oil in a pot and sauté the onion and garlic cubes for 1-2 minutes until translucent. Add the beans, sugar and bean herb, stirring for 2-4 minutes.

    Deglaze with vinegar and broth, then simmer for an additional 10-15 minutes over medium heat. Fill four hot jars with the chutney, seal tightly, and store in a cool place.
