Ingredients

  • 200 g mixed salad leaves
  • 2 bell peppers (1 red and 1 yellow)
  • 1 can kidney beans
  • Salt
  • Pepper (freshly ground)
  • 50 g Emmental cheese (coarsely grated)
  • 2 tbsp white wine vinegar
  • 1 tbsp Lemon Juice
  • 5 tbsp olive oil
  • 1 packet taco chips (ready-made)

Instructions

    Wash, rinse, and pat dry the salad leaves, then tear them into bite‑size pieces.

    Wash, trim, halve, seed, remove all white membranes from the bell peppers, and dice them.

    Drain the beans in a sieve, rinse with cold water, and let drain.

    Whisk together vinegar, lemon juice, salt, pepper, and olive oil; toss the salad ingredients with this dressing. Sprinkle with cheese and serve alongside taco chips.
