Bavarian Potato Salad for the Thermomix®

Bavarian potato salad for the Thermomix® by Spoonsparrow is always delicious again.

Ingredients

  • 2 kg waxy potatoes
  • 2 onions
  • 100 g pickled cucumbers (2 pickles)
  • 600 ml broth (preferably meat broth)
  • 8 tbsp white wine vinegar
  • 30 g medium-hot mustard (4 tsp)
  • Salt
  • Pepper
  • 8 tbsp rapeseed oil
  • 16 turkey sausages 70 g each (5% fat)
  • 40 g chives (2 bunches)
  • 160 g lamb's lettuce

Instructions

  1. 1.

    Wash potatoes. Add 500 g water to the mixing bowl, hang the steaming basket. Weigh potatoes and steam for 25 min / Varoma / level 1.

    Set steaming basket aside. Empty and dry the mixing bowl. Peel warm potatoes, slice into 3–4 mm thick rounds and place in a colander.

    Peel onion and together with cucumber process in the mixing bowl 5 sec / level 5. Add broth, heat everything for 3 min / 100 °C / level 1.

    Add 6 tbsp vinegar, mustard, salt, pepper and oil. Stir for 3 sec / level 4.

  5. 5.

    Pour the hot mixture over the potato slices, gently mix and let stand at least 30 minutes.

    Just before serving heat water in a wide pot but do not boil. Warm the sausages in it over low heat for about 10 minutes.

    Meanwhile wash chives, dry and cut into small rings.

  8. 8.

    Clean lamb's lettuce, rinse, spin dry and tear into bite‑sized pieces as desired.

  9. 9.

    Fold lamb's lettuce and chives into the potato salad. Season with salt, pepper and remaining vinegar. Remove sausages from the pot and serve with the salad.
