Ingredients

  • 400 g starchy potatoes
  • Salt
  • 1 Red Onion
  • 4 sprigs Parsley
  • 0.5 bunch chives (10 g)
  • 200 g Sour Cream
  • 150 ml whipping cream
  • ground pepper from the mill
  • nutmeg

Instructions

  1. 1.

Peel, wash and boil the potatoes in salted water for 25–30 minutes. Drain, let them steam dry, then press through a potato masher. Allow to cool completely.

  2. 2.

Meanwhile, peel and finely dice the onion. Wash, shake dry, and finely chop parsley and chives. Set aside 1 tablespoon of chopped chives as garnish.

  3. 3.

Mix the cooled potato mash with herbs, onion, sour cream, and whipping cream. Season the Bavarian potato cheese with pepper, salt, and freshly grated nutmeg. Line a large soup ladle with plastic wrap, press the mixture into it, cover, and chill for at least 1 hour to set and meld flavors.

  4. 4.

Serve the spread on a plate, garnished with the reserved chopped chives.
