Ingredients

  • 2 red bell peppers
  • 1 green bell pepper
  • 2 onions
  • 1 clove garlic
  • 1 rabbit (prepped for cooking, about 1.4 kg)
  • Salt
  • Pepper (freshly ground)
  • flour (for dusting)
  • 150 ml dry white wine
  • 500 g peeled canned tomatoes
  • 200 ml game stock

Instructions

    Wash the bell peppers, quarter them, remove seeds and cut into small pieces. Peel the onions and garlic; slice the onions thinly and finely chop the garlic. Wash the rabbit, pat dry, divide into 12 parts, season with salt and pepper. Dust the parts lightly with flour and brown them in a roasting pan using hot clarified butter until golden all around.

    Add the onions, garlic, and bell peppers to the pan, sauté briefly, then deglaze with wine. Pour in the tomatoes and game stock, season again, and simmer over medium heat for 45-60 minutes. Taste and adjust seasoning before serving.
