Barbecue Sirloin Steak with Potato Salad from Spoonsparrow: The classic becomes simply perfect with pickles and mayo.

Ingredients

  • 1 kg firm potatoes
  • Salt
  • 1 onion
  • 150 g pickles
  • 20 g vegetable broth (125 ml)
  • 1 tbsp vinegar
  • 1 tsp Mustard
  • ground pepper
  • 75 g mayonnaise
  • 50 g Yogurt (3.5% fat)
  • 285 g corn (drained weight; can)
  • arugula (for garnish)
  • 720 g beef sirloin steak (4 steaks)
  • 100 g barbecue sauce

Instructions

    Wash potatoes and boil in salted water for about 20 minutes. Drain, rinse with cold water, peel, and slice thinly.

    Peel onions, finely dice them, and mix with the potatoes. Chop pickles very small.

  3. 3.

    Bring broth to a boil with vinegar. Season with mustard, salt, and pepper. Let cool slightly and pour over the potatoes. Mix in pickles and let sit for at least 1 hour.

    Whisk mayonnaise and yogurt together. Add pickle water if needed. Fold the mixture into the potatoes. Drain corn in a sieve. Wash and dry arugula.

    Preheat grill pan or grill. Season steaks on both sides with salt and pepper. Sear each side for 3–4 minutes. Slice into strips and mix with barbecue sauce. Serve with potato salad, corn, and garnish with arugula.
