Ingredients

  • 2 kg pork rib
  • 1 tbsp Tomato Paste
  • 5 tbsp thin honey
  • 1 tbsp grated ginger
  • 20 ml sherry
  • 2 tbsp white balsamic vinegar
  • 2 tbsp sunflower oil
  • Salt
  • Cayenne pepper
  • 2 handfuls mixed salad greens
  • 200 g cocktail tomatoes
  • 1 Zucchini
  • 4 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • Salt
  • ground pepper

Instructions

    For the marination, whisk together tomato paste, 2 tbsp honey, ginger, sherry, vinegar and oil; season with cayenne pepper. Rinse the spare ribs, pat dry, cut into individual rib sections, and coat well with the mixture. Cover and refrigerate for about 6 hours. Afterwards salt lightly and grill over medium heat, turning occasionally, until cooked through in roughly 15 minutes.

    Meanwhile wash and trim the mixed salad, tear into bite‑sized pieces, and spread on serving bowls. Wash and slice the tomatoes; add to the salad. Wash and slice the zucchini; brush with 1 tbsp oil, season with salt and pepper, and grill each side for 1–2 minutes until golden brown. Mix remaining olive oil with apple cider vinegar, season with salt and pepper, and drizzle over the salad. Brush the ribs with the remaining honey in the final minutes of grilling and serve alongside the grilled zucchini on top of the salad.
