Baked Beans with Chorizo and Tomatoes

Ingredients

  • 200 g chorizo
  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 700 g large white beans (canned)
  • 400 g crushed tomatoes (jar or Tetra Pak)
  • 150 ml Vegetable broth
  • Salt
  • Pepper
  • 1 tsp Dried oregano
  • 3 tbsp black pitted olives
  • 2 tbsp chopped parsley

Instructions

    Slice the chorizo into rounds, then cut into thick strips.

    Peel and finely dice the onion and garlic cloves.

  3. 3.

    Heat oil in a pot and sauté the onion and garlic with the chorizo strips for 1–2 minutes.

    Add the white beans, crushed tomatoes, and broth; season with salt, pepper, and oregano. Simmer over medium heat while stirring occasionally for about 15 minutes.

    Finally stir in the olives and serve the baked beans in bowls. Sprinkle with parsley.
