Band Pasta with Chanterelles

The creamy band pasta with chanterelles from Spoonsparrow tastes delicious again and again!
Ingredients
- 2 red onions
- 350 g chanterelle mushrooms
- 250 g smoked tofu
- 500 g whole wheat band pasta
- Salt
- 1 tbsp Olive Oil
- 200 ml soy cream
- 20 g Parsley (1 bunch)
- nutmeg
Instructions

Peel and finely dice the onions. Clean the chanterelles thoroughly. Dice the tofu.

Cook the pasta according to package instructions in boiling salted water until al dente.

Meanwhile, heat olive oil in a large non-stick pan. Fry the tofu, stirring occasionally, for about 2–3 minutes until golden brown. Add the chanterelles and onion cubes and sauté for about 5 minutes. Deglaze with soy cream and bring to a boil once.

Wash, dry, shake off excess water, and chop the parsley. Drain the pasta and mix it into the mushroom mixture. Reheat and season with salt and freshly grated nutmeg. Plate the band pasta with chanterelles on dishes and serve.
