Banana-Pecan Bread
Banana-Pecan Bread without sugar from Spoonsparrow: Delicious and healthy too!
Ingredients
- 1 cube yeast
- 450 g whole wheat flour
- 1 pinch salt
- 2 Bananas
- 200 g pecan nuts
- 3 tbsp Rapeseed oil
Instructions

Crush the yeast and mix with 5 tbsp lukewarm water.

Mix 400 g flour and a pinch of salt in a bowl. Form a well in the center and add the yeast. Sprinkle some flour on top and cover for 15 minutes to rise.

Meanwhile, peel the bananas and mash them with a fork. Roughly chop half of the nuts.

Add the mashed bananas and nuts to the flour along with 2 tbsp oil and about 140 ml lukewarm water gradually, kneading into a smooth dough. Cover and let rise in a warm place for about 1 hour.

Grease a loaf pan (about 30 cm long) with remaining oil and dust with flour. Knead the dough again and pour it into the pan. Top with the remaining nuts and cover for another 15 minutes to rest.

Bake the bread in a preheated oven at 160 °C (fan 140 °C; gas: level 1–2) for about 1 hour. Then remove from the pan and let cool.
