Banana Bread with Hazelnuts

We love banana bread! Try making this banana bread with hazelnuts à la Spoonsparrow.

Ingredients

  • 200 g butter
  • 200 g sugar
  • 4 eggs
  • 1 pinch salt
  • 300 g flour
  • 100 g ground hazelnuts (or almonds)
  • 1 tsp Baking powder
  • 75 g sour cream
  • 2 Bananas
  • 1 tbsp Lemon Juice
  • butter (and ground nuts for the loaf pan)

Instructions

    Brush a loaf pan with butter and sprinkle with ground nuts. Preheat the oven to 180°C (bake top and bottom).

    Beat the butter and sugar until fluffy. Separate the eggs; beat the whites with a pinch of salt into stiff peaks. Gradually fold the yolks into the butter-sugar mixture, continuing to mix until light and airy. Sift together flour, baking powder, and nuts, then fold into the batter. Peel the bananas, blend with lemon juice, and stir into the batter along with sour cream until smooth and spreadable. Finally fold in the beaten egg whites, pour into the loaf pan, and level the top.

    Bake in the preheated oven for about 45 minutes, checking with a toothpick.
