Balsamic Date Sauce

A perfect sauce for dark grilled meat with a fruity note. Dates and pine nuts boost the fiber content.
Ingredients
- 20 g pine nuts (2 tbsp)
- 200 g small shallots
- 80 g dates (6 dates)
- 8 tbsp balsamic vinegar
- 125 ml classic vegetable broth
- 1 tsp Cornstarch
- Salt
- Pepper
Instructions

Toast the pine nuts in a dry pan until golden yellow. Transfer to a plate and let cool, then roughly chop.

Peel the shallots, leaving the root ends intact. Halve them and heat with the vegetable broth in a small pot. Cover and simmer gently for 20 minutes, stirring occasionally.

Meanwhile, pit the dates and slice into strips. Whisk the balsamic vinegar with the cornstarch. Add the dates and vinegar to the onions and bring to a boil once.

Let the sauce cool for about 30 minutes. Season with salt and pepper after cooling. Serve sprinkled with pine nuts.
