- 600 g shallots
- 5 tbsp olive oil
- 200 ml good dry red wine
- 60 ml balsamic vinegar
- 3 cloves garlic
- 3 tbsp honey
- Salt

Peel the shallots and garlic. Finely chop the garlic. In a pot, brown the shallots in hot olive oil until they are lightly golden all around.

Deglaze with red wine and vinegar, add the garlic and bay leaf, then simmer uncovered for about 30 minutes, stirring occasionally and allowing the liquid to reduce. Add honey and season lightly with salt. Serve warm or cold.
