Baked Vegetable Casserole

Ingredients

  • 2 tbsp sunflower oil
  • 1 small pumpkin (ca. 750 g)
  • 2 onions
  • 150 g feta cheese (sheep's milk)
  • 2 Eggs
  • 200 g whipping cream
  • 4 tomatoes
  • 200 g white cabbage
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • chili powder
  • fat for greasing the dish
  • 2 tbsp pumpkin seeds

Instructions

    Peel the pumpkin, remove seeds and fibers, dice the flesh. Briefly blanch the tomatoes, cool, peel, quarter, seed, and finely dice them. Slice the cabbage into thin strips. Peel the onions, cube them, and sauté in hot oil. Add the diced pumpkin and cabbage and cook further. Season with salt, pepper, and nutmeg. Whisk together eggs, cream, and feta; season with salt, pepper, and chili powder.

    Grease a baking dish and layer the pumpkin, cabbage, and tomatoes. Pour the egg mixture over the vegetables and bake in a preheated oven at 180°C (mid rack) for about 30 minutes.
