Baked tomatoes with sheep cheese from Spoonsparrow are low carb and the optimal after-work kitchen for singles!
Ingredients
- 8 ostrich tomatoes
- 200 g feta
- 1 tbsp dried oregano
- 2 tbsp olive oil
- Sea salt
- Pepper (freshly ground)

- 2 tbsp balsamic vinegar

Wash the tomatoes, remove the stem ends and slice them.

Coarsely cube the feta and place it in a heat‑proof dish. Arrange tomato slices on top and drizzle with olive oil. Sprinkle dried oregano over the mixture, then season with salt and pepper. Bake in a preheated oven at 200 °C (fan: 180 °C; gas: level 3) for about 20 minutes. Garnish with fresh herbs before serving. Offer balsamic vinegar on the side.
