Baked Spinach

Ingredients

  • 1 kg fresh leaf spinach
  • Salt
  • 1 Garlic clove
  • 1 tbsp butter
  • black pepper (freshly ground)
  • nutmeg
  • 1 tbsp Lemon Juice
  • butter (for the ramekins)
  • 75 g grated Gruyère cheese
  • 4 tbsp whole wheat breadcrumbs

Instructions

    Wash, trim and collapse the spinach in a little boiling salted water. Drain, rinse, let drain and squeeze out excess moisture, then roughly chop.

    Peel the garlic and press it with a garlic press. Sauté in hot butter, add the spinach, season with salt, pepper, nutmeg and lemon juice, and spoon into butter‑buttered ramekins (or cups).

    Sprinkle with cheese and breadcrumbs and bake in a preheated oven at 220 °C (fan: 200 °C; gas: level 3–4) for about 5 minutes until golden brown. Remove and serve immediately.
