Baked Shrimp Skewers

Baked shrimp skewers from Spoonsparrow are a great protein-rich finger food and taste as an appetizer and side dish.

Ingredients

  • 120 g rice flour
  • 1 tsp turmeric
  • 1 egg yolk
  • 1 tsp freshly chopped coriander leaves
  • Sea salt
  • 16 shrimp (prepped, peeled and deveined except for the tail segment)
  • a handful arugula
  • lemon slice (for garnish)
  • oil (for frying)
  • chili sauce (optional)

Instructions

    Whisk the flour with about 175 ml cold water, turmeric, and egg yolk into a smooth batter. Fold in coriander and a pinch of salt, cover, and chill for about 30 minutes.

    Wash and pat dry the shrimp.

    Rinse the arugula, trim, and let drain well. Arrange on plates with lemon slices decoratively.

    Coat each shrimp in the batter. Fry in hot oil for about 2 minutes until golden brown. Drain on paper towels. Skewer if desired and serve atop the arugula bed, drizzled with chili sauce to taste.
