Ingredients

  • 8 sea bream fillets (about 80 g)
  • 2 small zucchini
  • 1 Garlic clove
  • 2 tbsp lemon juice
  • 5 tbsp olive oil
  • Salt
  • pepper (from grinder)
  • 50 g dried tomatoes
  • parsley (for garnish)

Instructions

    Preheat the oven to 180°C fan. Cut parchment paper into four large rectangles (about 40x30 cm).

    Rinse the sea bream fillets and pat dry. Wash, peel, and slice the zucchini. Peel and finely grate the garlic. Mix with lemon juice and olive oil; season with salt and pepper. Brush this mixture over the fillets, rolling them so the flesh side faces outwards. Place two fillets on a sheet of paper. Arrange zucchini slices and tomatoes on top, drizzle with remaining oil.

    Fold the parchment over the fish, seal tightly (tie with kitchen twine if needed). Bake in the oven for about 20 minutes.
