Baked Scallops with Passionfruit

Ingredients
- 6 tbsp freshly grated parmesan
- 3 ripe passionfruits
- 8 scallops (prepped, cleaned)
- Salt

- 2 chicory heads
- 2 untreated oranges
- 4 tbsp olive oil
- pepper (ground)
- 4 slices toasted bread

Preheat the oven to grill mode. Line a baking sheet with parchment paper and place a heart-shaped cutter on it. Spoon a thin layer of parmesan into the cutter, carefully lift it up, repeat this process three more times for four hearts, and melt the cheese in the preheated oven for 2-3 minutes. Remove the finished hearts and let them cool.

Halve the passionfruits and scoop out the seeds. Wash the scallops, pat dry with salt and colored crushed pepper. Drizzle each scallop with passionfruit pulp and sprinkle 1 tsp parmesan over it. Bake in the hot oven for 4-5 minutes to gratinate. Separate the chicory leaves, wash them, rinse, and shake off excess moisture. Peel the oranges, removing the white pith as well, separate the fruit segments from the membranes, and catch the juice that drips out.

Whisk olive oil with 2 tbsp orange juice and the remaining passionfruit pulp, season with salt and pepper. Toss the chicory leaves with the orange segments and vinaigrette, then arrange on plates or in bowls. Garnish the finished scallops with a parmesan heart each and serve alongside the orange-chicory salad and toasted bread sticks.
