Ingredients

  • 12 oysters
  • 1 Shallot
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 1 tbsp chives
  • 200 g watermelon flesh
  • 4 slices of toast bread

Instructions

    Clean and open the oysters. Sprinkle sea salt on a plate, drizzle with ice‑cold water, and arrange the oysters on top.

    Peel the shallot and finely dice it. Mix lemon juice with oil, salt, pepper, diced shallot, and chives; taste and adjust seasoning.

    Slice watermelon flesh into ~5 mm thick rounds and cut heart shapes with a cookie cutter. Toast bread slices until golden brown and cut hearts with a cookie cutter.

    Place one melon heart on each oyster and drizzle with vinaigrette. Serve with the heart‑shaped toast pieces.
