Baked Red Cabbage with Gorgonzola Dressing

Baked red cabbage with Gorgonzola dressing from Spoonsparrow is healthy and truly delicious.
Ingredients
- 600 g red cabbage (1 small head)
- 2 tbsp Rapeseed oil
- 1 tbsp Maple Syrup
- Salt
- 1 Garlic clove
- 80 g Gorgonzola cheese (45% fat in solids)
- 150 ml buttermilk
- a splash lemon juice
- 1 tsp Honey
- Pepper
- 25 g nettle leaves (1 handful)
- 50 g Pine nuts

Halve the cabbage, remove outer leaves and cut into strips. Mix oil with maple syrup and brush over the strips. Salt the cabbage, place in a baking dish and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 10 minutes.

Meanwhile, for the dressing peel the garlic and blend it with crumbled Gorgonzola and buttermilk until creamy. Season with lemon juice, honey, salt and pepper. Wash nettles and pat dry. Toast pine nuts in a hot pan without oil over medium heat for 3 minutes.
