- 1 Aubergine
- 2 Zucchini
- 4 tomatoes
- 2 tbsp olive oil
- 1 bundle thyme
- 150 g grated Gruyère cheese
- Salt
- Pepper

Wash the aubergine, trim ends, slice into rounds, salt and let soak in water for 30 minutes. Rinse and pat dry with a kitchen towel.

Wash the zucchini, trim ends, slice into rounds. Heat oil and lightly brown the aubergine slices in batches on both sides. Wash the tomatoes, slice them. Layer the vegetables alternately in a baking dish like roof tiles. Salt and pepper.
