Baked Pumpkin with Rocket Salad

- 150 g rocket
- 1 Shallot
- 4 tbsp olive oil
- 3 tbsp apple cider vinegar
- Salt
- Pepper (freshly ground)
- 40 g walnut kernels
- 40 g Parmesan

Preheat the oven to 200°C with top and bottom heating.

Wash the pumpkin, halve it, remove fibers and seeds, then cut the halves into wedges. Place on a baking tray, drizzle with olive oil, brush with honey, and season with salt and pepper. Bake in the oven for about 35 minutes until golden brown.

Wash the rocket, dry it, and trim if necessary. Peel the shallot and finely dice it. Mix the shallot with olive oil, apple cider vinegar, salt, and pepper, then taste. Chop the walnuts.

Arrange the pumpkin wedges on a plate, top with the dressed rocket salad, drizzle the dressing over, grate parmesan on top, and garnish with walnut kernels.
