Ingredients

  • 1 medium pumpkin
  • olive oil
  • 300 g fresh young spinach
  • Salt
  • pepper (ground)
  • 250 g Gorgonzola (1 slice)

Instructions

    Quarter the pumpkin and remove seeds. Peel the quarters and cut the flesh into about 3 cm thick strips. Brush a baking sheet with oil. Brush the pumpkin strips with oil and season with salt and pepper. Bake in a preheated oven at 200°C fan for about 30 minutes until tender.

    Wash and dry the spinach. Cut the Gorgonzola into bite‑sized pieces, place on a heatproof plate, and toast under the oven grill from both sides. Arrange the spinach on plates and top with pumpkin and Gorgonzola. Season with salt and pepper and serve immediately.
