- 1 kg large firm potatoes
- 2 tbsp olive oil
- salt (pepper)
- 50 g bacon, thin sliced
- fresh sage leaves
- 3 tbsp grated parmesan

Wash potatoes, peel and cut several times with a sharp knife. Grease a fireproof dish and arrange the potatoes, brush with remaining olive oil, salt and pepper, then distribute finely sliced bacon on top.

Preheat oven to 200°C and bake the potatoes for about 50 minutes, occasionally drizzling with bacon fat. Wash sage leaves, dry shake them, scatter over the potatoes and roast for the last 10 minutes. Sprinkle grated parmesan and serve.
