Cheese Omelette with Herbs

Ingredients

  • 3 stalks chervil
  • 3 stalks basil
  • 20 g Parmesan
  • 1 Shallot
  • 8 eggs
  • 2 tbsp crème fraîche
  • 1 tbsp butter
  • 150 g sheep cheese
  • Salt
  • Pepper

Instructions

    Wash and dry chervil and basil, then roughly chop. Grate the parmesan. Peel and finely dice the shallot. Whisk the eggs with crème fraîche, parmesan, chervil, and half of the basil.

    Melt butter in an oven‑proof skillet, sauté the shallot until translucent, pour in the egg mixture, and crumble the sheep cheese on top. Bake in a preheated oven at 200 °C (180 °C fan, gas level 3) for about 10 minutes until golden brown.

    Remove from the oven, season with salt and pepper, and sprinkle with the remaining basil before serving.
