Ingredients

  • 250 g firm potatoes
  • 3 tomatoes
  • 1 head of garlic
  • 400 g pork ribs (cut into small pieces by butcher)
  • 2 tbsp olive oil
  • 1 tsp paprika powder (spicy)
  • 1 tin saffron strands (0.1 g)
  • Salt
  • Pepper
  • 300 g long-grain rice
  • 250 g chickpeas (canned)
  • 1 Spanish blood sausage (e.g., Morcilla de cebolla)
  • 500 ml meat broth

Instructions

    Peel, wash and slice the potatoes into ~1 cm thick crosswise slices. Wash the tomatoes and cut off the stem ends. Halve one tomato, dice the rest. Trim the top and bottom of the garlic head and remove only the outer skin.

    Rinse the ribs and pat dry. Brown them in hot oil with the potato slices in a non-stick pan, then set aside. Briefly sauté the diced tomatoes in the pan. Add paprika powder and saffron, seasoning with salt and pepper. Mix in the rice and drained chickpeas, then transfer everything to a clay baking dish.

    Halve the sausage and distribute it along with the potato slices, pork ribs, and tomato halves over or within the rice mixture. Place the garlic head in the center. Pour in the broth and bake at 180°C for about 40 minutes, adding more broth if needed; the rice should absorb all liquid by the end.
