Baked Potatoes in Sea Salt

Ingredients

  • 1 kg predominantly waxy potatoes (about medium size)
  • 2.5 kg sea salt (natural)
  • 2 egg whites
  • 2 sprigs Rosemary

Instructions

    Preheat the oven to 200°C fan.

    Wash the potatoes. Mix the salt with whisked egg whites and, if needed, a little cold water. Spread about half of the mixture on a parchment‑lined baking tray and lay the potatoes on top. Sprinkle with trimmed rosemary leaves and cover completely with the remaining salt. Bake in the oven for approximately 70 minutes.

    For serving, crack the crust and remove it.
