Ingredients
- 750 g pork fillet
- Salt
- Pepper
- 1 tbsp Olive Oil
- 250 g fresh mushrooms
- 1 cup sour cream
- 2 tbsp cognac
- 2 tbsp Tomato paste
- 100 g low‑fat gratin cheese
Instructions

Trim the pork fillet and season with salt and pepper. Heat a skillet with olive oil and brown the fillet all around for about 20 minutes, then remove and set aside warm.

Slice the cleaned mushrooms into thin rounds and quickly sauté them in the pan fat until lightly browned.

Whisk together sour cream, cognac, tomato paste, and grated cheese to form a creamy sauce.

Return the pork fillet to the skillet on top of the mushrooms, spoon the sauce evenly over it.

Cover with a lid and simmer over medium heat until the sauce melts into a smooth cheese‑cream. Serve with croquettes and vegetables.
