Baked Peaches with Almond Filling

Ingredients
- 6 peaches
- 100 g Amaretti
- 10 tbsp peach liqueur
- 3 tsp lemon juice
- 1 egg yolk
- 1 packet vanilla sugar
- 12 peeled whole almond kernels
- 2 tbsp butter
- powdered sugar (for dusting)

Parboil peaches for a few seconds, shock in cold water, peel, halve and remove pits.

Crush Amaretti finely. Mix crushed Amaretti with half the liqueur, lemon juice, egg yolk and vanilla sugar. Fill peach halves with mixture and place an almond on each.

Place in a buttered baking dish, top with butter flakes and pour remaining peach liqueur over. Bake at 200°C for about 15–20 minutes until gratinated. Dust with powdered sugar before serving.
