Baked Filet Steaks

Ingredients
- 500 g ripe tomatoes
- 2 Garlic cloves
- 4 tbsp olive oil
- Salt
- 1 pinch sugar
- black pepper (freshly ground)
- 640 g fillet (4 filet steaks)
- 2 tbsp crème double
- 100 g grated Parmesan
- 1 tbsp pickled green pepper

Score the tomatoes crosswise, blanch them, cool in ice water, peel, remove stems and cut flesh into pieces. Peel garlic and finely chop.

Sauté garlic and tomatoes in 1 tbsp hot oil in a pan. Season with salt, pepper and sugar, and reduce by frequent stirring until thickened.

Brown the steaks in remaining oil for about 3 minutes on each side. Season with salt and pepper, wrap in foil and keep warm.

Stir the tomato mixture with crème double, taste. Remove steaks from foil and place in a shallow oven-safe dish. Brush with tomato cream and sprinkle Parmesan. Bake under grill or at high top heat until a crisp crust forms. Sprinkle pickled green pepper over the steaks at the end. Serve with baguette and a fresh salad.
