Baked Onions with Anchovy Filling

Ingredients
- 4 large vegetable onions
- 1 carrot (finely grated)
- 4 tbsp butter
- 250 g mixed minced meat
- Salt
- Pepper (freshly ground)
- 6 anchovies
- 2 Tbsp whipping cream
- 2 tbsp chopped dill
- 125 ml Vegetable broth

Peel the onions and simmer them in lightly salted water for about 10-15 minutes, then remove and drain. Cut off a lid from each onion and hollow out the interior with a small spoon.

Take half of the onion mixture and roughly chop it. Melt 2 tbsp butter. Sauté the chopped onion mixture until translucent, add grated carrot, then add minced meat; cook vigorously, season with salt and pepper, and remove from heat. Stir in cream, dill, and anchovies.

Fill the hollowed onions (use a squeeze bottle if needed) and place them in a greased baking dish. Pour vegetable broth over. Bake on medium rack in a preheated oven at 180°C with top and bottom heat for about 30 minutes until cooked through.
