Ingredients

  • 800 g green asparagus
  • Salt
  • 200 g mascarpone
  • 2 Eggs
  • Pepper
  • 1 piece parmesan (about 50 g, 30% fat in solids)

Instructions

    Wash the asparagus, peel the lower third and cut off the woody ends. Cook the asparagus in boiling salted water for about 5 minutes. Drain, shock with cold water and let it dry well.

    Place the asparagus spears in an oven‑proof pan or baking dish. Whisk the mascarpone with the eggs until smooth. Season with pepper and a little salt and spread over the asparagus.

    Grate the parmesan finely, sprinkle over the asparagus and bake in a preheated oven at 200 °C (fan 180 °C, gas: level 3) for about 20 minutes until golden brown.
